About Ittoryu GOZU

GOZU is a tasting experience deeply focused on elevating the Wagyu breed while displaying its versatility and nuance through the craft of robata (live fire grilling) and the preparation of the animal in its entirety. Accommodations are available for intimate groups up to complete buyouts. Our menu showcases beef sourced by Chef/Owner Marc Zimmerman and team from small and private Japanese farms. Sustainability, respect for the animals, and responsible consumption are a point of focus and are reflected in our cuisine. A tasting menu comprised of nuanced and intentful dishes is executed by our chefs around an open fire hearth where wagyu is complemented with local as well as Japanese sea life, farm produce, and wild foods.
