Congratulations on your Engagement! I am an Event Coordinator and could do a consultation for you for free via email being that I am not located in Florida. When is the wedding date, do you have a budget, and about how many people? If you would like any help please let me know and I would be glad to assist you.
Congratulations! Heather Hiltwine, Event Coordinator http://eventsbyheather.webs.com hhiltwine@gmail.com

Try going to WeddingWire.com and look for venues in Daytona Beach. Melbourne Beach has a Hilton that has a great wedding site. http://www.hilton.com/en/hi/hotels/wedding/index.jhtml;jsessionid=2UERM1KHG35NCCSGBIV2VCQ?ctyhocn=MLBHIHF&cid=OH,HH,mlbhi,WeddingF

Congratulations!
I am a little further south in Brevard County and include a page on my website that lists every place I have found in the area to have a wedding and/or reception. http://brevardminister.com/brevard_options.htm
Although these venues are not in the area your fiance prefers, they might generate some ideas so you can Google similar types of venues in Volusia County.
I can tell you from personal experience that the3adlers' recommendation is a solid one. I have officiated quite a number of weddings at both the Hilton and Crowne Plaza in Melbourne Beach and they are fantastic. They have beautiful accommodations and the staff are simply wonderful.
Best Regards, Rev. Ann Fuller Melbourne, FL
