I am a third generation caterer with my feet planted firmly in tradition and my eyes on the future. Some dishes just can't be improved upon, like my grandma's classic potato salad, but food can be fun, as in my scampi deviled eggs. Salt is not the only seasoning, and can be reduced or left out entirely in certain dishes. I work with my cliets to give them the flavors they love with respect to their dietary needs.
